Makes 9 muffins
3 pots of Coconut & Raspberry Quoats
3 ripe bananas
260g natural yogurt
Combined yogurt, mashed bananas and eggs in a mixing bowl.
Mix in Quoats followed by raspberries.
Transfer into muffin/large bun cases in a tray.
Cook at 180ᴼC for 25-30 minutes.
Leave to cool on a wire rack, then transfer to a container. These will stay fresh for a few days and can also be frozen.
